I decided to interrupt all the flower posts with a recipe from my friend Lauren, who’s cooking is much like her personality – bright and honest, fun without an ounce of fuss. If it wasn’t for proper ettiequte, rules about sharing and all, I would have much preferred to have found a little nook and ate the fruit salad she brought to a friend’s baby shower until my little heart’s content. Thankfully, when I asked for the recipe and if it would be alright if I posted in my journal for safe keeping, she agreed. This is not your ordinary, uninteresting, fruit salad. The honey and mint do amazing things to the fruit but it’s the clementine whipped cream that stole my tastebuds. Trust me on this one and make it. And then go let Lauren know how you didn’t want to share either.

Summer Fruit Salad with Clementine Whipped Cream

Fruit Salad

2 cups diced pineapple
1 cup blueberries
1 cup strawberries
Juice and zest of 2 limes
1/4 cup fresh mint
1 TBSP honey
1/4 cup fresh mint

Combine lime juice and honey and stir until combined. Toss in fruit and mint, saving a few leaves for garnish.

Clementine Cream

1/2 cup heavy cream
1/4 cup honey
2 TBSP powdered sugar
8 oz. cream cheese at room temperature
June and zest of 2 clementines

Whip heavy cream and powdered sugar until soft peaks form. In another bowl, whip cream cheese, honey, and clementine juice and zest until light and smooth. Fold in the cream cheese mixture into the whipped cream, 1/3 at a time,being careful not to over mix. Add the remaining cream cheese. Taste and add more honey if needed.
